You open the Parquet Encoder agent configuration dialog from a workflow configuration: Right-click the agent icon and select Configuration... or double-click the agent icon.

The only configuration setting for a Parquet Encoder is the choice of a Parquet Profile. The choice of profile is required - the profile specifies both a schema as well as encoding options.
